Sweet and Spicy Fried Cabbage

sweet and spicy fried cabbage
Half a large Cabbage, five to six cups
Julienne Carrots, two to three cups
2 tablespoons crushed garlic
Half a cup of sugar
Half a cup of coconut oil
6 tablespoons of chili powder
4 tablespoons of red pepper flake
Salt and Black Pepper to taste
In a large pot, melt the coconut oil into the pot and add the seasonings, stirring the oil so that it does not burn, throw into the pot, the chopped cubed, cabbage and julienne carrots, stir fry for about 7 to 10 minutes, stirring constantly and don't let the cabbage or carrots burn, add a cup of water and steam for 20 to 30 minutes covered, stirring occassionally, add the sugar and any other seasonings that you may desire.
The little sugar will bring out the sweetness of the cabbage but you can substitute it with your favorite aternative surgar substitute. Add the hot peppers to taste, if you don't like your food too spicy, you can limit how much hot pepper flakes and chili powder that you may add.
The coconut oil adds a nice flavor but when digested, only half the calories of regular oil.
