Hummus? Jicama?

Can you eat hummus on veggie day? as a dip for carrots/celery?
and can Jicama be eaten?
Dear Laura,
a great question!
Hummus is a spread or dip based on cooked, mashed chickpeas, mixed with olive oil, lemon juice, salt and garlic. It is a popular food throughout the Middle East.
As chickpeas are not allowed on the cabbage soup diet we recommend to omit this kind of dip.
Jicama however can be eaten on the cabbage soup diet. This is a edible, crispy and sweet root. The vegetable has been cultivated in South America for centuries, and it is quite often used in Mexican cuisine. Its unique flavor lends itself well to salads and vegetable dishes.
All the best,
Gabriela
