fried cabbage with ginger

I learned this from a chinese friend. We eat this often served over rice.

Peanut oil 3 or 4 slices of fresh ginger, hot peppers - to taste Soy sauce, 1/2 head of cabbage sliced very thin.

Pour oil in skillet, cover bottom of pan. Place ginger slices and broken dried red peppers in oil and heat on high until peppers are black and ginger is browned and crisp. Carefully add sliced cabbage to this and continue to stir until cabbage is coated with oil and is starting to cook. You can cover it for a couple of minutes to help wilt it down. Continue to stir and turn added soy sauce to taste. Cook until desired tenderness. this is delicious served over rice.

Variation is to slice very thin and narrow pieces of pork loin (can use a couple of loin chops)and cook those first just until no longer pink. Remove from skillet then continue with recipe above. When cabbage is almost done add the pork back in to the recipe.
