Gazpacho (Spanish Cold Soup)
This is not a typical alternative to the cabbage soup but I've thought I add it because it's also a recipe for a low fat cold soup, it's very easy and tastes delicious.
1 medium large cucumber
1 ltr tomato juice
2 garlic gloves
Herbal salt
Pepper
Some parsley if wanted
Peal the cucumber and cut it in pieces. Peal the garlic gloves. Put altogether in a blender and mix it to a puree. Fill it up with tomato juice and mix again. Taste it with some pepper and salt.
Put it into the fridge and chill it before serving. If wished sprinkle some parsley on it.
