Cold Soup Recipes

Recipes for a cold soup based on cabbage are always nice to have, especially when you are planning to do the Successful cabbage soup diet in the hot summer time. Find here a great recipe.

I’ve also included a low fat recipe for Gazpacho, a cold Spanish soup based on tomatoes.

Cold Cabbage Soup Recipe

(for hot summer days)
3 cups chicken or beef broth (you can use bouillion cubes too)
1 1/2 cups green cabbage, finely shredded
1 tbsp prepared mustard
1 tsp sugar
2 cups buttermilk
1 cucumber medium sized, finely diced
1 tbsp fresh dill , minced
2 tbsp fresh coriander or parsley (optional)

Heat broth in a medium saucepan. Add cabbage and simmer in low fire for ten minutes. Remove pan from heat and stir in dill, mustard and sugar. Add buttermilk and cucumber. Chill thoroughly before serving. Garnish with parsley/coriander and serve ice cold.

Gazpacho (Spanish Cold Soup)

This is not a typical alternative to the cabbage soup but I've thought I add it because it's also a recipe for a low fat cold soup, it's very easy and tastes delicious.

1 medium large cucumber
1 ltr tomato juice
2 garlic gloves
Herbal salt
Pepper
Some parsley if wanted

Peal the cucumber and cut it in pieces. Peal the garlic gloves. Put altogether in a blender and mix it to a puree. Fill it up with tomato juice and mix again. Taste it with some pepper and salt. Put it into the fridge and chill it before serving. If wished sprinkle some parsley on it.
