Cauliflower Soup Recipe Ideas

Find here two delicious cauliflower soup recipe ideas. Both are suitable for the cabbage soup diet week. The first one is a combination of cauliflower, cabbage and spinach, while the second one is without cabbage at all.

Cauliflower Soup Recipe with Cabbage & Spinach

Packed full of vitamins and iron, this is a tasty and healthy twist on traditional cabbage soup.
Ingredients:
1 head cauliflower, chopped
1/2 head green cabbage, chopped
1 cup spinach (fresh or frozen)
1/2 cup onion
1 clove garlic
1 cup skim milk
2 cups vegetable broth
1/2 tsp black pepper
1/2 tsp cayenne pepper

Directions:
1. Steam cauliflower, cabbage and spinch until soft
2. Sautee onion and garlic using low calorie cooking spray
3. Combine all ingredient ts and blend until smooth.
4. Reheat to serve.

Makes 4 servings.

Tasty Cauliflower Soup Recipe

A tasty alternative to cabbage soup, a touch of jalapeno gives this fat free cauliflower soup a nice kick. The chicken bouillon can be substituted for vegetable if you'd like a vegetarian or vegan version.

Ingredients:
6 cups water
4 cups cauliflower,chopped
2 cups carrots, sliced
1/2 chopped onion
1 jalapeno pepper, chopped
2 tbsp parsley, chopped
4 tsp chicken bouillon concentrate

Directions:

1. Place all ingredients in large saucepan. Cover and simmer over medium heat for 15-20 minutes, until vegetables are tender.
2. Drain liquid into a seperate container and set to one side.
3. Puree vegetables in food processor.
4. Pour pureed vegetables and liquid back into saucepan and reheat. Add salt and pepper to taste.

Makes 6 Servings
