Cabbage and Tomato
combinations

If you’ve never tried the combination of cabbage and tomato, then you are in for a treat! It is said that the properties of these two natural enhance each other, which make for a delicious combination.

Wilted Cabbage with Fresh Tomatoes

A tasty dish that will quickly become a family tradition
1 Head Fresh Cabbage
1 Onion, chopped
1 lb bacon, fried and crumbled
2 Tbl butter
4 Tbl sugar
4 Drops Tabasco sauce
Bacon Drippings
2 Cups Water
Salt, to taste
Diced ripe tomatoes, to taste

Dried basil, to taste

First slice cabbage into large chunks. Place cabbage in ice water. Chill for at least 30 minutes. After cabbage is thoroughly chilled, remove from water and pat dry. Shred cabbage.

Keep bacon drippings in pan, add chopped onion. On medium heat sauté until transparent. Add shredded cabbage, salt and sugar. Incorporate the mixture completely. Measure out 2 cups of water and add Tabasco sauce. Stir. Add water and Tabasco sauce mixture to pan. Bring mixture to a boil and then turn to low. Simmer cabbage until cooked. The cabbage will be slightly wilted, but crisp when cooked.

Pour mixture into serving bowl. Garnish with chopped tomatoes and crumbled bacon. Add basil to taste over mixture and serve!


Cabbage and tomato slaw
with sherry-mustard vinaigrette

12 cups thinly sliced green cabbage – about one lb head
12 ounces grape tomatoes or cherry tomatoes, halved
10 green onions, thinly sliced
1/3 Cup Sherry Wine Vinegar
3 Tbl Honey
2 Tbl Mustard seeds
1 1/2 Tbl Dijon mustard
2/3 Cup Olive oil

Salt & Pepper to taste
In a Large bowl, whisk together Sherry Vinegar, Honey, Mustard seeds and Dijon mustard. Slowly add Olive oil to mixture. Once oil is incorporated, add remaining ingredients. Generously coat ingredients and add salt and pepper to taste. Refrigerate at least 2-3 hours, but no more than 4. Toss it before serving.

Serves 8


Cabbage Wraps in Tomato Sauce

Yummy! 12 large cabbage leaves
1 lb ground beef, browned
1 cup cooked rice
2 Tbl finely chopped onion
1 tsp caraway seed
1 tsp salt
1/4 tsp pepper
1 egg
2 1/2 Tbl cooking oil
2 (8 oz) Cans tomato sauce
1/4 cup water

String for tying cabbage Wraps Have your beef already browned and rice cooked before starting this recipe. Begin by steaming the cabbage leaves. After steamed, trim the thick ridge off.
In a medium bowl combine:
ground beef, browned
cooked rice
onion
caraway seed
salt, pepper
egg
Spoon the beef and rice mixture onto the steamed cabbage leaves. Roll cabbage leaves in a wrap style and tie closed with string. Brown cabbage wraps in oil. Add tomato sauce an water. Uncovered, simmer for 40 minutes.

Alphabet Cabbage Soup

A warm meal on a cold day
1/2 c Alphabet spaghetti
2 med Onions, coarsely chopped
5 Garlic cloves, chopped
2 Tbl Olive oil
1 sm Carrot, diced
2 tsp Ginger, grated
2 c Tomatoes, diced
6 c Stock
1/2 Cabbage, thinly sliced
15 Mint leaves, fresh & sliced
Salt & pepper
Cayenne, to taste
In a pot, cook pasta al dente. After draining, set aside. Pour olive oil into large pan. Add onions and garlic, sauté. Add ginger and carrot. Cook for about one minute. Next, add tomato, stock and cabbage. Turn heat to medium and cook until cabbage is tender. About 15 to 20 minutes. Add salt, pepper and cayenne to taste. Evenly distribute pasta into four bowls. Pour soup over pasta and top with fresh mint. Serve.
